California Grown Gourmet Pistachios

American Pistachio Puffs

1 cup Water
½ cup Butter or margarine
1 cup Flour
¼ teaspoon Salt
4 Eggs
1/3 to ½ cup Shredded Swiss cheese
¼ cup Natural American pistachios, finely chopped


Heat water and butter in medium saucepan until water boils and butter melts. Add flour and salt all at once; reduce heat. Stir vigorously until mixture leaves side of pan and begins to form a ball. Remove from heat. Add eggs one at a time; beat well after each addition. Continue to beat until mixture has a satiny sheen. Stir in cheese and pistachios. Drop by spoonfuls onto large greased baking sheet. Bake at 400° F. 40 to 45 minutes or until golden brown. Yield: Approximately 15 puffs.
