Lemon Pistachio Dressing

Enjoy this fresh nutty dressing with veggies or on a fresh salad.

1⁄4 Cup Fiddyment Farms Pistachio Paste
2 Tablespoons Minced Shallots
1 Teaspoon Lemon Zest
Juice of 1⁄2 a Lemon
1 Teaspoon Fresh Thyme Leaves
1⁄4 Cup Rice Vinegar
1⁄4 Cup Red Wine Vinegar
2 Tablespoons Honey
2 Tablespoons Toasted Pistachio Oil
Dash of Salt

Whisk together the first 8 ingredients. Slowly whisk in the pistachio oil and season with salt. Store the dressing in a covered container in the refrigerator.
