California Grown Gourmet Pistachios

Pistachio Crusted Salmon

1 lb salmon filets, skin removed
Salt and Pepper

Pistachio Paste:
Juice of 1 to 2 fresh limes
2 tablespoons Fiddyment Farms Pistachio Butter
2 tablespoons chopped fresh herbs (parsley, basil or whatever you prefer)
2 cloves fresh garlic, chopped

Preheat oven to 425. Spray foil baking pan with nonstick cooking spray.

Put salmon in pan and season with salt and pepper. Bake for about 10 minutes. While fish is baking, mix together the remaining ingredients to form a paste. Spread pistachio paste on baked salmon and put under broiler about 5 minutes (watch carefully so that topping does not burn). Also works well with BBQ Grilled Salmon!
